Chicken Salad (Diabetic Recipe)
4 oz Rotini; uncooked
8 oz Plain low fat Yogurt
1/3 cup Wheat germ
3 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1/8 teaspoon Black pepper
1 cup Chicken skinless breast, cooked, diced, and cooled
3/4 cups Broccoli; diced
2 medium tomatoes; seeded and diced
1 small red onion; diced
Cook pasta according to package directions. Rinse with a bit of water to cool and drain well.
In a bowl, combine yogurt, wheat germ, vinegar,
mustard and pepper and mix well. Add pasta and remaining
ingredients. Toss carefully but enough to coat. Chill for about an hour before serving.
