Chicken Rivel Soup

Ingredients

  • 8 cups chicken broth
  • 1 onion, diced
  • 1/2 cup chopped celery
  • 2 Tbsp. dried parsley
  • 2 cups flour
  • 1 tsp. salt
  • 2 eggs, beaten
  • 2 cans corn or equivalent fresh
  • 2 cups diced cooked chicken
  • Salt and pepper to your taste
  1. Bring the broth, celery, onion and parsley to a boil in a pot.
  2. In a bowl, mix flour, salt and eggs with a fork until crumbly. Rub the mixture between your fingers over the broth, dropping in pea-sized bits.
  3. Add corn and chicken. Cover and simmer 10 to 15 minutes, until dumplings are cooked through.
