Chicken Reuben


4 boneless skinless chicken breasts


1/4 tsp. salt


1/8 tsp. pepper


1 16oz. can sauerkraut, drained well


4 slices, 4×6″, Swiss cheese


1-1/4 c. bottled Thousand Island salad dressing


1 tbsp. freshly chopped parsley for garnish



Preheat the oven to 325. Grease an oblong baking dish. Place the chicken in the baking dish.

Sprinkle with the salt and pepper. Spoon the sauerkraut evenly over the chicken. Top with the Swiss cheese and the salad dressing. Cover and bake for 1 1/2 hours.

Sprinkle with parsley, if desired, before serving.Makes 4 – 5 servings.
