Chicken Relish Salad


3/4 c. celery, sliced
3/4 c. chopped carrots
1/4 c. diced sweet pickles
2 tbsp. minced onion
1/2 tsp. salt
1 lg. pkg. lemon Jello
2 c. boiling water
2 c. cold water, scant


Chill Jello until slightly thickened, add chopped chicken and vegetables. (I put the vegetables in the mold and cup the Jello over it.) Chill until firm. Unmold and garnish with mayonnaise and parsley.
