Chicken Paprika with Poppy Seed Noodles

Ingredients

  • 1 medium onion, sliced
  • 3 Tbsp butter
  • 2 Tbsp flour
  • 2 tsp paprika
  • 1/2 tsp salt
  • 1 cup chicken broth
  • 2 slightly beaten egg yolks
  • 1 cup sour cream
  • 2 cups diced cooked chicken
  • 1 3-oz can sliced mushrooms
  • 2 Tbsp chopped red bell pepper
  • 2 Tbsp chopped green bell pepper
  • 2 hard cooked eggs, chopped
  • 4 oz dry noodles
  • 2 Tbsp butter
  • 1 tsp poppy seeds
  1. In saucepan, cook onion and peppers in butter until tender
  2. Blend in flour, paprika and salt; add broth, cook and stir till thickened and bubbly; cook 1 minute more
  3. Stir small amount of hot mixture into egg yolks; return to hot mixture. Cook over low heat 1 minute more
  4. Stir in sour cream till blended
  5. Add chicken and mushrooms
  6. Heat slowly but do not boil
  7. Serve over noodles and garnish with chopped egg
