Chicken Noodle Soup

  • 1 hen
  • 1 stalk of celery (not a rib, the whole thing)
  • 1 clove bud of garlic
  • Dried hot pepper (to taste)
  • 1 lg onion
  • Salt and pepper to taste
  1. Put all in dutch oven; cook till hen is tender.
  2. Let the broth and hen sit in fridge over night.
  3. Skim some fat off top of hen broth. Skin and debone chicken, add chicken meat back into broth.
  4. Bring to a boil and add rice or noodles.
  5. This can be frozen or canned.
