Chicken Livers

Ingredients

  • 2 slices bacon or 2 tsp bacon grease
  • 1/2 tsp onion powder
  • 1/2 tsp poultry seasoning
  • 1/4 tsp salt
  • 1 lb chicken livers, cut in 3rds and drained on paper towels
  • 1/3 cup flour
  • 1 chicken bouillon cube, dissolved in 1 cup water
  1. Fry bacon in large skillet until crisp; drain on paper towels
  2. Pour off all but 2 tsp drippings
  3. Mix flour, onion powder, poultry seasoning and salt
  4. Roll chicken livers in flour mixture (reserve 1 tbsp of flour mixture to thicken sauce)
  5. Fry livers in drippings 6 to 8 minutes turning 3 or 4 times until browned
  6. Whisk reserved flour into broth until smooth
  7. Stir into skillet; cook 1 to 2 minutes until thickened, stirring once or twice
