Chicken Lemonato

Ingredients

  • cooking spray
  • 1/2 can tomato paste (3 oz.)
  • 4 skinless chicken thighs
  • 2 c. mushrooms, sliced
  • 1 bay leaf
  • 7 cloves garlic, sliced
  • 1/2 lemon (3 tbs.)
  • water to cover chicken 1 inch
  • S&P, to taste
  1. Brown thighs in a skillet, take out and sauté garlic and mushrooms in drippings.
  2. Move all into a medium size pot.
  3. Mix paste with lemon juice and water, add to pot.
  4. Add salt pepper and bay leaf to pot.
  5. Simmer for 30-40 minutes.
