Chicken Italiano

Ingredients

  • 2 whole chicken breasts
  • 2 T. oil
  • 1/2 pound mushrooms, cleaned and chopped
  • 1 can (16 oz) stewed tomatoes
  • 1 med. clove garlic, crushed
  • 1 tsp. oregano
  • 1/2 tsp. thyme
  • 1 can (8 oz.) tomato sauce
  • 1/3 C. grated Parmesan cheese
  • salt and pepper
  1. Bone chicken and cut into 1 in. strips
  2. Heat oil, sauté chicken and mushrooms until chicken turns white. Stir in stewed tomatoes, garlic, oregano, thyme, tomato sauce, and 3 T of grated cheese.
  3. Add salt and pepper to taste
  4. Simmer, uncovered, 5 minutes
  5. Using a slotted spoon, spoon onto crepes. Assemble and place on a baking sheet, and sprinkle tops of crepes with remaining cheese.
  6. Bake at 375º until cheese browns (about 15 minutes)
  7. Serve immediately with any remaining sauce
