Chicken Gizzards

Ingredients

  • 1 lb. chicken gizzards
  • 2 cloves garlic
  • 1 large onion, chopped
  • 1 tbsp. chopped parsley
  • 1/4 cup vegetable oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup water’
  • 1/4 cup vegetable oil
  • 1/3 cup wine vinegar
  1. Cook gizzards in pot of water (enough to cover) for 1-1 1/2 hrs. Cover pot half way. Drain and cool.
  2. While that’s going on, peel garlic, chop onions and parsley.
  3. When gizzards are cool, slice them up.
  4. In a large skillet, heat 1/4 cup. oil.
  5. Add onions, parsley, garlic, salt and pepper. Stir, cover and simmer for 10 minutes. Add gizzards, and stir. Add water. Then rest of oil. Then vinegar. Cover and simmer 10 minutes more.
  6. Serve over noodles, rice, mashed potatoes
