Chicken Eugene
- 6-8 deboned chicken breasts
- 1 stick melted margarine
- 1 can cream of mushroom soup
- 1 can sliced mushrooms
- 1 8-oz carton sour cream
- 1/2 cup cooking sherry
- Line bottom of baking dish with chicken breasts
- Mix together all of the other ingredients for sauce in mixing bowl – it’s best to mix with wire whip
- Pour over chicken and bake at 350° for 1 hour and 15 minutes
