Chicken Enchiladas

Ingredients

  • 3 cooked chicken breasts bone and skin removed and chicken diced
  • 1 can Rotel with green chilies diced and drained
  • 2 cups Monterey jack cheese
  • 1 can cream of chicken soup
  • 1/3 cup chicken broth
  • 1/4 cup minced onion
  • tortillas
  • 2 sliced jalapeno peppers
  1. In a saucepan bring broth to boil. Add Rotel and onion. Cook till onion is tender
  2. Add cream soup and continue boiling and stirring 5 minutes
  3. Add chicken, heat 5 minutes
  4. On each tortilla sprinkle liberally with cheese. Add 2 -3 tblsp chicken mixture and roll
  5. Place seem side down in a casserole dish.
  6. Cover with more cheese, add a few peppers to topand bake at 350 till cheese is bubbly
