Chicken Crepes

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/3 cup flour (I use whole wheat)
  • 1 tsp. oil
  • pinch of salt

Filling

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 2 Tbsp. Dry white wine
  • 1/2 cup cooked mushrooms
  • 1/2 cup Swiss Cheese-shredded
  • 1/2 cooked chicken
  • 1/4 cup fresh parsley-chopped
  1. Mix first ingredients in a bowl.
  2. Drop by Tablespoons onto a oiled hot skillet.
  3. After 1 minute, turn and cook the other side until golden. Stack crepes until ready to fill.
  4. Melt the butter and add flour and stir for 1 minute. Then add the broth, milk, and wine. Blend it until smooth
  5. Mix the mushrooms, cheese, chicken and parsley, and stir into the sauce.
  6. Put 1/3 cup of the filling in the center of each crepe, and roll into a tube, then turn the ends under. Keep warm in oven while filling.
