- 1 Tbsp. olive oil or vegetable oil
- 1 1/4 c. coarsely chopped onions
- 1 coarsely chopped green pepper
- 2 c. diced, cooked chicken
- 1 c. cooked rice
- 2 c. Paul Newman’s Own spaghetti sauce
- dash of ground nutmeg
- In large saucepan, heat oil over medium heat. Add onion and green pepper; sauté 8 to 10 minutes until tender.
- Stir in remaining ingredients. Cover; simmer 30 to 45 minutes, stirring occasionally.
