Chicken Cordon Bleu


  • 1 whole chicken breast, boned
  • 4 slices ham
  • 4 slices Swiss cheese
  • 1 egg, beaten
  • seasoned bread crumbs
  1. Remove skin and the bone from chicken breast
  2. Pound each 1/4 section of chicken thinly between two sheets of wax paper; be careful not to tear chicken (use rolling pin to pound)
  3. Cover each section with a slice of ham and cheese and roll up
  4. Secure with toothpicks
  5. Dip each roll in egg and then bread crumbs
  6. Saute in melted butter in frying pan or bake in 350° oven till done
