Chicken Cacciatora Maddalena

Ingredients

  • 4 lbs chicken pieces
  • 4 Tbsp olive oil
  • 1 tsp fresh chopped parsley
  • 1/2 stalk chopped celery
  • 1 clove chopped garlic
  • 1 tsp salt
  • dash pepper
  • 2 bay leaves
  • 1/2 cup dry white wine
  • 2 Tbsp water
  1. Heat olive oil in frying pan; brown chicken pieces, chopped parsley, celery, garlic, salt and pepper over moderate heat, until chicken is well browned
  2. Add bay leaves and after 1 minute, the wine
  3. Cook gently until wine is almost evaporated
  4. Add water, cover, and simmer 30 minutes or until chicken is done
