Chicken Burgers

Ingredients

  • 1/2 lb ground chicken
  • 1/4 cup cooked long-grain rice, cooked without salt or fat
  • 1 Tbsp finely chopped fresh cilantro
  • 1 tsp low-sodium soy sauce
  • 1/4 tsp peeled, grated ginger root
  • 1/8 tsp pepper
  • vegetable cooking spray
  1. Combine first 6 ingredients in a bowl; stir well
  2. Divide mixture in half, shaping each portion into a 3/4″ thick patty
  3. Coat a non-stick skillet with cooking spray; place over medium high heat until hot
  4. Add patties; cook 5 minutes on each side until done
