Chicken Breast a la Max
- 6 chicken breasts, with skin
- 1 pkg. frozen chopped spinach, thawed & drained
- 1 pkg. Brie (4-6 oz.)
- few scallions, finely chopped
- 2 cloves garlic, minced
- salt & pepper to taste
- 1/2 stick melted butter
- Blend together in food processor all ingredients, except chicken.
- Stuff blended mixture underneath chicken skin (about 2 tbsp. each breast).
- Roll skin and secure with toothpicks.
- Place on baking sheet, coat with melted butter.
- Bake for 30-45 minutes at 375°
