Chicken Breast a la Max

Ingredients

  • 6 chicken breasts, with skin
  • 1 pkg. frozen chopped spinach, thawed & drained
  • 1 pkg. Brie (4-6 oz.)
  • few scallions, finely chopped
  • 2 cloves garlic, minced
  • salt & pepper to taste
  • 1/2 stick melted butter
  1. Blend together in food processor all ingredients, except chicken.
  2. Stuff blended mixture underneath chicken skin (about 2 tbsp. each breast).
  3. Roll skin and secure with toothpicks.
  4. Place on baking sheet, coat with melted butter.
  5. Bake for 30-45 minutes at 375°
