Chicken Bhutuwa

Ingredients

  • 1.5 lbs Chicken, cut in 1″ pieces
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Mustard Oil, for marinade
  • 1 Tbsp Cumin Powder
  • 1 tsp Turmeric
  • Salt to taste
  • 1 tsp freshly ground Black Pepper
  • 1/4 cup Mustard Oil, for stir-frying 1 tsp.
  • Fenugreek seeds
  • 5 whole Clove
  • 5 cloves Garlic, minced
  • 1″ piece fresh Ginger, minced
  • 3 fresh Red Chilies, julienne
  • 1 cup Green Peas
  • 1 cup green onions, cut into 1-inch lengths
  • 1/4 tsp Cinnamon Powder
  1. In large bowl combine chicken, lemon juice, mustard oil, cumin, turmeric, salt & pepper. Toss well
  2. In a non-stick pan warm 1/4 cup of mustard oil over med.-high heat
  3. Sauté fenugreek seeds until they turn dark
  4. Add cloves, sauté for 15 seconds
  5. Transfer coated chicken to pan, stir well
  6. Brown over med-high heat
  7. Add garlic, ginger & red chilies & reduce heat to medium
  8. Stir-fry chicken until cooked. May need to add water to moisten
  9. Add green peas, green onions & cinnamon
  10. Stir-fry for 2 minutes. Drain off excess oil
