Chicken And Rice Dinner


1 broiler fryer chicken cut up, 2 to 3 pounds


1/4 to 1/3 cup flour


2 TBs cooking oil


2 1/3 cups water


1-1/2 cups uncooked long rain rice


1 cup milk


1 tsp poultry seasoning


1 tsp salt


1/2 tsp pepper


Chopped fresh parsley



Dredge chicken pieces in flour. In a skillet, heat oil and brown chicken on all sides. Meanwhile, combine water, rice, milk, poultry seasoning, salt and pepper. Pour into a greased 13 X 9 X 2 baking pan. Top with chicken. Cover tightly with foil and bake at 350*F for 55 minutes until rice and chicken are tender. Sprinkle with parsley before serving. Serves 4 to 6.
