Chewy Cherry Cinnamon Sticks
Yeasty, sweet, chewy – totally dip-able.
1 ¼ cups warm water
1 tablespoon yeast
¾ cup sugar
½ cup unsalted butter, softened
1 teaspoon pure vanilla
1/3 cup dry milk powder
1 teaspoon salt
¼ teaspoon cinnamon
2 cups all purpose flour
2 cups bread flour
1 1/2 cups dark raisins, plumped and dried
½ cup dried cherries, plumped and dried
1/2 cup canned sour cherries, drained
1 cup sugar
¼ cup unsalted butter, softened
2 teaspoons cinnamon
In a large bow or bowl of an electric mixer, whisk together water, yeast and sugar. Whisk in eggs, ¾ cup sugar, butter and vanilla and most of flour to make a smooth dough. Add in more flour until mixture can be kneaded. Knead, adding in more flour as required, 8-10 minutes.
Form dough into a ball and place in a greased bowl for about 45 minutes and let rise, covered. Gently deflate and let rest ten minutes, then press or roll out to a rectangle of 20 inches by ten inches. Or, divide dough in two equal portions.
Spread with filling, distributing butter, then sugar, cinnamon, and raisins and cherries over surface. Line a doubled up baking sheet with parchment paper
Preheat oven to 375 F.
Roll up dough into a log then flatten gently. Cut into 12 cylinders or logs and place on baking sheet and brush tops with beaten egg white and dust with coarse or granulated sugar. Let rise 15 minutes, then bake until browned, about 25-30 minutes.
