Chef John’s French Onion Soup

Ingredients

  • 2 onions, thinly sliced
  • 21 ounces of stock (chicken & beef combined)
  • 2 tab flour
  • 1 teas salt
  • 1/4 lb butter
  • 1 cup white wine

Topping

  • 4 slices french bread
  • olive oil
  • garlic powder
  • swiss cheese
  • parmesan cheese
  1. Cook soup ingredients all together on low heat until onions are soft
  2. Toppings: Oil slices of bread and sprinkle with garlic powder
  3. In each bowl (oven proof) of soup, add bread, swiss cheese & parmesan cheese (to taste)
  4. Place under broiler to lightly brown cheese
