Cheezy Beer Biscuits
These quick yeasty-tasting biscuits are best when eaten as an accompaniment within 30 minutes of baking. Or split and serve topped with chile
1 cup all-purpose flour
1 cup rolled oats
2 teaspoons Clabber Girl Baking Powder
3/4 cup diced cheddar, chili Jack or other cheese
1/2 teaspoon salt
1/2 cup lager beer
1/4 cup water
1 tablespoon olive or vegetable oil
Preheat the oven to 450’F. with a rack set in the upper third.
Stir together the flour, oats, baking powder salt and cheese until combined well. Add the beer and water and stir until it forms a wet dough.
Coat the bottom of a 9-inch round cake pan with the oil. With a floured 1-1/2 inch ice cream scoop, scoop rounds of the batter around the edge of the pan.
Bake for 15 to 20 minutes or until puffed. Serve immediately as an accompaniment to the chili or split the biscuits and top with the chili.
