Cheesy Scrambled Egg Casserole

Ingredients

  • 3 Tbsp margarine or butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 2 cups cubed cooked ham
  • 12 eggs beaten
  • 1 small jar sliced mushrooms, drained
  • 1 can condensed cheddar cheese soup
  • 1/2 cup grated parmesan cheese
  • 1/4 cup seasoned dry bread crumbs
  1. Heat oven to 350°
  2. Grease 12×8 inch baking dish
  3. Melt butter in large skillet
  4. Add onion and bell pepper; cook and stir until onion is crisp tender
  5. Add ham and eggs; cook over medium heat until eggs are firm but moist, stirring occasionally
  6. Remove from heat; fold in mushrooms
  7. In small bowl, combine soup and 1/4 cup of the parmesan cheese; mix well
  8. Gently fold into egg mixture
  9. Spoon into greased dish
  10. Sprinkle with bread crumbs and remaining 1/4 cup parmesan cheese
  11. Bake at 350° for 25 to 30 minutes, or until golden brown
