Cheesy Hash Spinach Pie

Ingredients

  • Single pie crust
  • 2 10 oz pkg frozen chopped spinach
  • 2 eggs beaten
  • 1 can cream mushroom soup
  • 1/4 c flour
  • 1 T prepared horseradish
  • 1 tsp prepared mustard
  • 1 15 oz can corned beef hash
  • 1 c shredded American cheese
  • 2 T chopped pimiento
  1. Prepare crust. Prick bottom and sides well with fork. Bake 450° for 10-12 minutes.
  2. Cook spinach, Drain well, pressing out excess water. Combine eggs, soup, flour, horseradish, and mustard, stir in drained spinach.
  3. Spread hash in pie shell; spoon spinach mixture over. Bake uncovered 350° 45 minutes
  4. Combine cheese and pimiento; sprinkle over pie. Bake 2-3 minutes longer.
  5. Let stand 5 minutes
