Cheese Spread with Pimento
2 8-oz. packages extra sharp cheddar cheese
1 dozen hard boiled eggs
1 small jar pimentos, chopped
1 small onion, chopped (or 1/2 cup)
1 cup miracle whip or similar salad dressing
Using a food processor, meat grinder or grater, shred the cheese, boiled eggs pimentos and onion; stir together well. Add salad dressing and stir until all is combined. You may add more salad dressing if you want a thinner spreading consistency.
Place the cheese spread in a covered bowl and let sit in refrigerator overnight. This will allow all the flavors to combine.
Serve with crackers.
