Cheese & Meatball Soup

Ingredients

  • 2 cups water
  • 1 cup whole kernel corn
  • 1 cup chopped potato
  • 1 cup chopped celery
  • 1/2 cup carrot slices
  • 1/2 cup chopped onion
  • 2 Beef bouillon cubes
  • 1/2 tsp. hot sauce
  • 2 cups Velveeta¬†Meatballs
  • 1 pound very lean ground beef
  • 1/4 cup bread crumbs
  • 1 egg
  • 1/2 tsp. salt
  • 1/2 tsp. hot sauce
  1. Mix, shape into small balls. Brown well. Set aside till soup ingredients are made.
  2. Combine first 8 ingredients in a saucepan. Add browned meatballs, stirring gently and bring mixture to a boil. Cover and simmer on low heat until vegetables are tender, about 1-1/2 -2 Hrs.
  3. Right before serving, add cheese, stirring gently until melted and blended.
