Cheese Frittata


  • 6 eggs
  • 3 scallions, chopped (include much of the green)
  • 2/3 cup Gouda Cheese
  • 1/4 cup Parmesan Cheese
  • 5 tbs. butter
  1. Beat the eggs and fold in the cheeses.
  2. Melt butter in cast iron pan. Toss in onions for a few moments, then pour in the egg cheese mixture.
  3. Cook over medium heat until the sides and bottom are set.
  4. Place under a hot broiler and cook until the center is barely firm.
  5. Serve with hot rolls or bread and jelly.
