- 6 eggs
- 3 scallions, chopped (include much of the green)
- 2/3 cup Gouda Cheese
- 1/4 cup Parmesan Cheese
- 5 tbs. butter
- Beat the eggs and fold in the cheeses.
- Melt butter in cast iron pan. Toss in onions for a few moments, then pour in the egg cheese mixture.
- Cook over medium heat until the sides and bottom are set.
- Place under a hot broiler and cook until the center is barely firm.
- Serve with hot rolls or bread and jelly.
