Cheese Cauliflower Soup

Ingredients

  • 1 medium cauliflower
  • 1/4 C. butter, melted
  • 2 T. chopped onion
  • 2 T. chopped celery, cooked 2 minutes
  • 3 T. flour
  • 4 C. hot chicken broth
  • 2 C. hot milk
  • 6-8 slices Velveeta cheese
  1. Cook cauliflower until soft; drain and mash with a fork.
  2. Add milk, butter, onion and celery.
  3. Add flour to some chicken broth. Add to soup. Salt and pepper to taste.
  4. Add the cheese.
