Cheese Blintzes

Ingredients

  • 3/4 cup flour
  • 1/2 tsp salt
  • 1 cup milk
  • 2 slightly beaten eggs
  • 1-1/2 cups well drained cottage cheese
  • 1 slightly beaten egg
  • 2 Tbsp sugar
  • 1/2 tsp vanilla
  • dash cinnamon
  1. Mix flour & salt
  2. Combine milk & 2 eggs; gradually add to flour, beat till smooth
  3. Pour about 2 Tbsp batter into hot lightly greased 6″ skillet
  4. Quickly swirl pan to spread batter
  5. Cook 2 minutes or until the bottom browns and edges begin to pull away from sides
  6. Loosen & remove from skillet
  7. Repeat
  8. Blend together rest of ingredients for filling
  9. Have pancakes cooked side up; spoon filling into center of each
  10. Overlap sides & ends
  11. Brown on both sides in a small amount of butter or oil
  12. Serve hot, topped with sour cream and cherry preserves
