Cheery Cherry Holiday Bread
Makes 1 loaf
1 / 4 cup warm water (100o to 110o F)
1 envelope FLEISCHMANN’S Active Dry Yeast
1 / 2 cup warm skim milk (100o to 110o F)
1 / 2 cup sugar
1 / 4 cup butter or margarine, softened
1 / 2 teaspoon salt
3-1 / 2 cups all-purpose flour
1 large egg
1 teaspoon vanilla extract
3 / 4 cup cherry preserves
1 / 4 cup sliced almonds
Green maraschino cherries, quartered
Egg wash (recipe follows)
Almond Glaze (recipe follows)
Place warm water in large warm bowl. Sprinkle in yeast; stir until dissolved. Add milk, sugar, butter, salt and 1 cup flour; blend well. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add egg, vanilla and 1 cup flour. Beat at high speed for 2 minutes. Stir in enough remaining flour to make a soft dough. Turn out onto lightly floured surface; knead until smooth and elastic, about 8 to 10 minutes. Place in a greased bowl, turning to grease top. Cover; let rise in warm, draft-free place until doubled in size, about 1-1 / 2 hours.
Punch dough down. Remove dough to lightly floured surface. Roll to 18- x 8-inch rectangle. Spread cherry preserves over center-third (lengthwise portion) of rectangle. Cut 1-inch-wide strips from edge of filling to edge of dough. Cut dough into 9-, 6- and 3-inch pieces. Take each strip and twist twice. Alternating sides, fold twisted strips at an angle across filling toward opposite end. On a greased baking sheet, place 9-inch piece at the bottom, then the 6-inch, and the 3-inch on top, forming a pyramid. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes. Brush with Egg Wash; sprinkle with almond slices and cherries.
Bake at 350oF for 20 to 25 minutes or until done. Remove from sheet and cool on wire rack. Drizzle with Almond Glaze. Decorate with red bow over top.
Egg Wash: Combine 1 egg and 1 tablespoon water. Beat well.
Almond Glaze: Combine 1/2 cup powdered sugar, sifted and 2 teaspoons milk. Add 1/2 teaspoon almond extract. Stir until smooth.
