Charley’s Quick Jambalaya

Ingredients

DIRECTIONS:

  • 1/2 lb Breakfast sausage, country style
  • 1 lb Smoked sausage
  • 1 cup Chopped tasso (peppered ham)
  • 1 cup Chopped green and/or red peppers
  • 1 cup Chopped onions
  • 3 ribs Chopped celery
  • 3 cups Chicken broth or good stock
  • 1 jar Crazy Charley’s Piquante Salsa
  • 2 cups Long grain white rice
  • 1/2 cup each, chopped fresh parsley and green onions for garnish.

 

Saute first three ingredients in heavy 4-6 qt pot until brown. (Add a little olive oil if you like.) Add the next three ingredients, stir over low heat until tender. Add uncooked rice, stir until coated. Add broth, Piquante salsa, salt and pepper to taste, bring to boil. Cover and simmer for 20 minutes. Serve with your favorite bread (sourdough is great!). [Serves 8]
