Celery Soup

Ingredients

  • 1-1/2 cups celery stalks and leaves, finely cut
  • 1 cup water
  • 3 cups half and half
  • 1 cup chicken broth
  • 3 Tbsp Minute tapioca
  • 1/4 tsp celery salt
  • 1-1/2 tsp salt
  • Dash of cayenne
  • Few drops onion juice
  • 3 Tbsp butter
  1. Cook celery in water for 10 minutes. Add half and half and chicken broth, minute tapioca, celery salt, salt and cayenne.
  2. Pour mixture in a double boiler and cook for 15 minutes or until tapioca is clear, stirring frequently. Stir in onion juice and butter and cook a few minutes more.
  3. Serve
