Cauliflower Soup

Ingredients

  • 1 medium cauliflower
  • milk
  • 1/2 c flour
  • 4 T butter
  • 1 lb ground beef
  • 1 med onion, finely chopped
  • 2 T parsley, minced
  • 1 egg slightly beaten
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp nutmeg
  • salt & pepper to taste
  • chopped chives
  1. Trim tiny flowerets from cauliflower and set aside. Cut remaining cauliflower into pieces and cook until tender in boiling salted water. Drain and put through a sieve
  2. Measure and add enough milk to make 2 quarts
  3. Blend some of this mixture with flour to make a smooth paste and stir back into cauliflower and milk. Add butter. Heat over hot water until thickened, stirring occasionally
  4. Mix ground beef, onion, parsley, egg, 1 tsp salt, and 1/4 tsp pepper; shape into meat balls about 1″ in diameter. Drop meatballs and flowerets into the hot soup
  5. Cook 20 mins, or until meatballs are cooked
  6. Season with nutmeg, salt and pepper. Sprinkle each serving with snipped chives
