Cashew Nut Drop Cookies
1 1/2 cups margarine
2 cups packed brown sugar
1 cup granulated sugar
1 1/2 teaspoons vanilla flavoring
6 cups flour
2 1/4 teaspoons Clabber Girl Baking Powder
2 1/2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 pint sour cream
1 1/2 cups chopped cashews
In a large bowl cream together margarine, sugars, eggs and vanilla. Add sour cream and blend well. In a separate bowl mix flour, baking powder, baking soda, and spices. Combine with creamed mixture and mix well. Add cashews; stir until combined.
On a lightly greased cookie sheet drop cookies by rounded tablespoonful, about 2 inches apart. Bake in a 375 degree oven for 15 to 20 minutes.
May frost with confectioners’ sugar frosting, if desired.
