Carrot Soup

Ingredients

  • 3 T butter
  • 1 lb carrots, peeled and diced
  • 1 sm onion, chopped
  • 1 med sized potato, peeled and diced
  • salt to taste
  • dash pepper
  • 1 tsp chopped marjoram
  • 1/2 tsp sugar
  • 3 c beef broth
  • 1 T chopped parsley
  1. In a heavy saucepan melt butter add carrots, onion and potato. Add salt, pepper, sugar and marjoram. Cover and cook over low heat 12 minutes
  2. Add the broth and bring to a boil. Lower heat, cover and simmer for another 15 minutes
  3. Puree the soup in a blender. Add chopped parsley and serve
