Carraway Cheese Muffins
1 cup rye flour
3/4 cup all-purpose flour
1/4 cup sugar
2 1/2 teaspoons Clabber Girl Baking Powder
1/2 teaspoon salt
1 beaten egg
3/4 cup milk
1/3 cup cooking oil
3/4 cup shredded cheddar cheese (3 ounces)
1 1/2 teaspoons caraway seed
Grease twelve 2 1/2-inch muffin cups or line with paper bake cups. Set aside. In a large mixing bowl stir together rye flour, all-purpose flour, sugar, baking powder, and salt. Make a well in the center.
In a small bowl combine egg, milk, and oil. Add to flour mixture all at once. Stir just till moistened (batter should be lumpy). Fold in cheese and caraway seed.
Spoon batter into prepared muffin cups, filling each 2/3 full. Bake in a 400° oven for 20 to 25 minutes or till golden. Remove from muffin cups; serve warm. Makes 12.
