Carbon’s Golden Malted Molasses Cookies
1/2 cup butter
1/2 cup shortening (not margarine)
1 1/2 cups sugar
1/2 cup molasses
2 eggs, slightly beaten
4 cups Carbon’s Golden Malted Flour
1/2 tsp. salt
2 1/4 tsp. baking soda
2 1/4 tsp. ground ginger
1 1/2 tsp. ground cloves
1 1/2 tsp. ground cinnamon
In a large mixing bowl, cream together butter, shortening, and sugar. Beat in molasses and eggs, set aside. In another bowl, combine flour, salt, baking soda, ginger, cloves and cinnamon. Blend with wire whisk. Gradually mix flour mixture with creamed ingredients until dough is blended and smooth.
Spoon onto greased cookie sheet. Bake at 350 degrees for 11 minutes. DO NOT OVERBAKE. Cool on a wire rack. Store in a tightly covered container to maintain softness. Makes 3 dozen cookies.
