Carbon’s Golden Malted Cake
7 eggs, separated
1/4 tsp. cream of tartar
2 1/3 cups Carbon’s Golden Malted Flour
1 cup sugar, heaping
1 rind of lemon (or orange), grated
3/4 cup water
Separate eggs and beat whites with cream of tartar until stiff. Mix remaining ingredients well and then fold into egg white. Blend carefully and pour into a tube pan. Bake at 350 degrees for 1 hour. Invert pan over a bottle or funnel until cake is cool. It is a moist cake and can even be enjoyed without icing.
