Caramel Pie

Ingredients

  • 2-1/2 cups milk
  • 1-1/4 cup sugar
  • 3 egg yolks (save whites for meringue)
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/2 stick margarine
  • 3 Tbsp corn starch
  • 1 baked 9″ pie crust
  1. Mix all ingredients into a heavy saucepan
  2. Bring just to boiling point; set aside
  3. Brown 1/2 cup white sugar in a heavy skillet, stirring constantly to prevent scorching. Add the browned sugar to the custard mix slowly and cook until thick, stirring constantly
  4. Pour into baked pie shell
  5. Top with meringue made with egg whites that were left over
  6. Brown in 350° oven for 8-10 minutes
