Canadian Cheese Soup

Ingredients

  • 3 C. chicken broth
  • 4 peeled and diced potatoes
  • 2 diced celery ribs
  • 1 carrot, diced
  • 1 small onion, diced
  • 6 oz. Canadian bacon, trimmed and diced
  • 2 T. butter
  • 2 T. flour
  • 1 C. milk
  • 2 C. shredded Cheddar
  • 1/8 tsp. pepper
  1. In a Dutch oven, combine the first 5 ingredients. Bring to a boil. Reduce heat, cover and simmer for 20 minutes or till vegetables are tender.
  2. With a potato masher, mash vegetables several times. Add bacon, continue to simmer.
  3. Meanwhile, melt butter in saucepan, add flour and cook, stirring constantly for 1 minute. Gradually whisk in milk. Bring to a boil; boil and stir for 2 minutes (mixture will be thick). Add to vegetable mixture, stirring constantly.
  4. Remove from heat and add cheese and pepper.
  5. Stir till cheese is melted.
