Cabbage And Potato Soup

Ingredients

  • 3 cups chicken broth
  • 2 cups shredded cabbage
  • 2 medium potatoes, pared & diced
  • 2 Tbsp butter or margarine
  • 1 cup chopped green onion
  • 3 Tbsp flour
  • 3 cups milk, divided
  • 2 tsp Dijon-style mustard
  • 3/4 tsp Worcestershire sauce
  • 1/4 tsp pepper
  • 1/8 tsp salt
  • 2 to 3 drops Tabasco, optional
  1. In large saucepan, heat broth over medium heat. Add cabbage and potatoes. Cover and simmer for about 10 minutes or until potatoes are tender
  2. In large skillet, over medium heat, melt butter. Add onions and cook until tender. Stir in flour and cook 2 to 3 minutes. Add 1 cup of milk to the broth mixture. Add onions. Add remaining ingredients
  3. Stir in the remaining 2 cups milk
  4. Cover and simmer over low heat for 10 to 15 minutes
