Butterscotch Meringue Pie


  • Baked 9-inch piecrust
  • 2 cups brown sugar
  • 4-1/2 tbsp cornstarch
  • 3 eggs
  • 2-1/4 cups milk
  • 3 tbsp butter
  • 3 tsp sugar
  • Pinch salt
  • 1/4 tsp cream of tartar
  1. In a saucepan, beat egg yolks; stir in milk.
  2. Combine brown sugar and cornstarch; add to yolk mixture. Cook and stir over medium heat until mixture thickens. Add butter; cool. Pour filling into piecrust.
  3. Meringue: Preheat oven to 350 degrees F. Beat egg whites, sugar, salt, and cream of tartar until mixture stands in peaks. Spread over pie filling, being sure to spread meringue all the way to the edge. Bake 8 minutes, until golden brown.
