Brown-Butter Butterscotch Pie


  • 6 T butter or margarine
  • 1 c dark brown sugar, firmly packed
  • 1 c boiling water
  • 3 T cornstarch
  • 2 T flour
  • 1/2 t salt
  • 1-2/3 c milk
  • 3 egg yolks, slightly beaten
  • 1 t vanilla
  • 1 baked 9-inch pie shell
  1. Melt butter in heavy skillet over low heat–Watch carefully
  2. When golden brown, add brown sugar
  3. Cook, stirring constantly, until mixture comes to a boil. Stir in water and remove from heat. Mix cornstarch, flour and salt in saucepan. Blend in milk, stirring until smooth
  4. Stir in sugar mixture. Cook over medium heat, stirring constantly, until it comes to a boil. Boil 1 minute. Remove from heat. Stir a little of hot mixture into egg yolks; then blend into hot mixtue. Cook one minute. Remove from heat.
  5. Add vanilla. Cool slightly. Pour into pie shell
  6. Top with whipped cream
