Broccoli Cheese Soup

Ingredients

  • 2 pkgs frozen chopped broccoli
  • 1 med red onion, chopped
  • 2 cups milk
  • 3/4 lb velveeta cheese, cubed
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1/2 cup grated carrot
  • black pepper
  • cayenne pepper
  1. Saute onion in butter until clear
  2. Simmer broccoli in about 1 cup water for 5 to 7 minutes; do not drain. Add onion and remaining ingredients
  3. Stir & simmer 5 to 10 minutes, or until cheese is melted
