Bran Refrigerator Muffins

Ingredients

1 c. All Bran
1 c. HOT water
1/3 c. cooking oil
2 eggs, or 1/2 c. Egg Beaters
2 c. buttermilk
1 c. unbleached flour
1 c. whole wheat flour
1 1/2 c. oat bran
2 1/2 tsp. baking soda
1 tsp. salt
1 c. raisin bran
1/2 c. raisins

Instructions

Soften All Bran in hot water. Add oil, sugar, eggs and buttermilk. Mix well and add dry ingredients. Bake 20 minutes at 400 degrees. Unused batter will keep in refrigerator up to 6 weeks. Total recipe makes 30 small or 24 large muffins.
