Bran-Apple Muffins

Ingredients

  • 2 C. 100% bran cereal flakes
  • 1 1/2 C. 2% low-fat milk
  • 1 C. all purpose flour
  • 3 T. spoonable artificial sweetener (the kind that measures like sugar)
  • 2 tsp. baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp cream of tarter
  • dash of salt
  • 1/4 C margarine, melted
  • 2 egg whites, whisked until foamy
  • 1/2 C chopped, pared apple
  1. Preheat oven to 400º. Spray 12- 2 1/2 in muffin cups with no stick baking spray
  2. In bowl, combine cereal and milk. Let stand 5 minutes
  3. In small bowl, combine flour, spoonable sweetener and remaining dry ingredients.
  4. Blend melted margarine and whisked egg whites into cereal mixture. Add dry ingredients; stir until just moistened. Fold in chopped apple.
  5. Spoon batter into prepared muffin cups. Bake at 400º for 18-20 minutes until done
