Blueberry Sour Cream Custard Flan

    • Sour Cream Crust:


  • 2 1/2 cups all purpose flour
  • 3/4 cup brown sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 cup cold butter, cut into chunks
  • 1 cup sour creamSour Cream Custard:


  • 2/3 cup sugar
  • 2 tbsp all purpose flour
  • 4 cups blueberries
  • 1 cup sour cream
  • 4 egg yolks



  1. Sour Cream Crust: Add flour, baking powder, salt and sugar to mixing bowl of mixer
  2. Using paddle attachment blend in butter until mixture resembles fine breadcrumbs
  3. Fold in sour cream. Blend ingredients just until mixture forms a ball of dough
  4. Wrap dough in plastic wrap and chill for 1 hour. On a lightly floured surface, roll out enough dough to cover 2 flan pans or 2 pie plates (Remaining dough can be frozen until required for further use)
  5. Sour Cream Custard: In the mixing bowl of the mixer, blend together egg yolks, sour cream, sugar and flour. Line flan crusts with blueberries. Pour egg mixture over blueberries
  6. Bake at 350 degree F for 35 minutes or until golden brown. Remove from oven and let cool. Cut flans into wedges and, if desired, serve with fresh chopped seasonal fruits tossed in sugar.
