Black And White Pie



  • 6 Tablespoons sweet butter
  • 2 cups chocolate wafer crumbs
  • 1 teas. pure vanilla extract


  • 3 eggs, separated
  • 1/2 cup sugar
  • 2 cups light cream
  • 1/4 teas. grated nutmeg
  • pinch of salt
  • 2 Tablespoon dark rum
  • 1 cup heavy cream
  • grated semisweet chocolate


  1. Melt butter and mix with the crumbs. Add vanilla extract. Press into a 10-inch pie pan. Bake in 350º oven for 15 minutes


  1. Beat the egg yolks until thick, add sugar, and beat again. Stir in the light cream. Add nutmeg, salt and rum.
  2. Whip the egg whites until stiff, but not dry. Fold them into the egg yolk mixture. Pour into the pie pan shell.
  3. Bake at 325º for 25 minutes. Cool.
  4. Whip the heavy cream and spread on top. Sprinkle with grated semisweet chocolate.
