Black Bean Soup

  • 4 oz. cooked smoked turkey, cut into julienne strips
  • 2 tablespoons olive oil
  • 2 large onions, chopped
  • 4 cloves fresh garlic, minced, or more to taste
  • 4 cans black beans, undrained
  • 4 cups low sodium good quality chicken stock
  • 1-1/2 cups medium salsa
  • 1 teaspoon crushed oregano leaves
  • 4 tablespoons fresh coriander, chopped
  1. In a large, heavy soup pot, sauté the strips of smoked turkey along with the onion and garlic in the oil for about 3 minutes. Add remaining ingredients (except cilantro), simmer gently covered for about 30 minutes.
  2. Top individual bowls with a pinch of the coriander
